Billie O’Shea has always been passionate about cooking having carved a path to food and wine courses around the world to fulfill her dream of opening a cookery school in Co Meath.
She has trained at Ballymaloe, Alix Gardner, Ghan House and the National Bakery School. She has the ‘Advanced Certificate’ at the Wine Development Board. She has also educated her palate traveling in France, Switzerland, Italy and South America. In 2005, she decided to combine her background as a nurse/teacher with a business management degree in order to satisfy her consuming zeal for cookery by establishing Fairyhouse Food & Wine School.Her aim is to instill enthusiasm for food and confidence by teaching simple techniques which can be adapted to a wide range of recipes to create wonderful meals to share with family and friends.
